Named after Mount Kushigatake (also known as Mount Takazasu), the southernmost peak of Japan’s Southern Alps, this sake honors the ideals of “local production for local consumption.” Made exclusively with Tamazakae rice grown in Fujikawa-cho and the pristine underground water sourced from the mountain itself, it is a bold and clean Junmai sake that proudly carries its regional identity in every sip.

Producer's Background:

Founded in 1790 by Yorozuya Hachigoro, Yorozuya Brewery has been making sake in Masuho (now part of Fujikawa-cho), Yamanashi Prefecture, for over 230 years. The brewery's transformation in 1932, when famed poet Yosano Akiko visited and inspired a new name and identity, marked a commitment to artistry and cultural heritage. Today, the brewery, known for its Shunnouten label, continues to brew with devotion to nature, tradition, and locality. Using slightly hard water from Mt. Kushigatake and a philosophy of gentle encouragement rather than control, the brewmaster nurtures sake that reflects both season and soil.

Serving Suggestions:

Serve gently warmed (40–45°C) in a ceramic ochoko or small porcelain cup to enhance its savory depth and smooth texture. An excellent match for grilled fish, simmered root vegetables, yakitori, or miso-based dishes.
