Esteemed for its cellared Riserva Barolo, the winery's portfolio diversifies gracefully into the Dolcetto d'Alba, mirroring the rich tapestry of Piedmont's viticultural landscape.
Viticultural Virtues:
Cultivated in the revered Langhe area, the Dolcetto d'Alba grapes flourish on southwest-facing slopes, rooted in calcareous and clayey marl soils. This terroir, coupled with the Archetto variation of the Guyot training system, sets the stage for the Dolcetto grape to express its full potential. Harvested between September 10th and 20th, the grapes undergo a natural fermentation process, eschewing selected yeasts for a genuine reflection of the Langhe's essence.
Winemaking Wisdom:
The winemaking process adheres to the principles of tradition and authenticity. Following a 12-day fermentation at controlled low temperatures (24-28°C), the wine is gently pressed and aged in stainless steel tanks for four months at 18°C. This systematic approach, emphasizing minimal intervention, captures the Dolcetto's vibrant character, culminating in a wine bottle and refined one month before its release to the world.
