Sensory Description:

A delicate pale gold hue greets the eye, with fine, lively bubbles forming a graceful cordon around the glass. The nose is initially subtle, revealing rounded aromas of white fruits, led by pear and hints of peach. On the palate, a fresh and supple entry leads to a beautifully balanced structure with consistent white fruit notes. The finish is refreshing, marked by bright citrus and lemon zest.

Winemaker's Background:

The Goutorbe-Bouillot family has been rooted in Damery since the 18th century, weathering the region's challenges and triumphs with enduring passion. Their approach blends historical practices with innovation, as seen in their adoption of the solera method to create complex, consistent cuvées. Today, the family's legacy continues under the stewardship of Bastien Goutorbe, who brings modern expertise to this storied house while maintaining its commitment to sustainability, evidenced by its High Value Environment and Sustainable Viticulture certifications.

Serving Suggestions:

Serve chilled at 45-50°F in a flute to highlight its fine mousse. This Champagne is a versatile aperitif and pairs wonderfully with a carpaccio of scallops drizzled with olive oil and lemon. Its refreshing finish also complements light desserts like lemon tart or poached pears.
