Patrick Piuze, one of Chablis’ most celebrated contemporary winemakers, launched Val de Mer as a second project in collaboration with the Moutard-Diligent family. Unlike his eponymous label, Val de Mer is produced in a separate above-ground cellar in Tonnerre, allowing the wines to evolve with the seasonal temperature changes. Though sharing a similar spontaneous fermentation and élevage style, Val de Mer emphasizes broader vineyard representation and a slightly more traditional Chablisienne philosophy in bottling.
