Winemaker's Craft
At the helm of Colterris's winemaking process is Bo, a winemaker with deep roots in the art of wine, inspired by his grandfather's home winemaking. His journey through the world of wine took him from ecology studies to prestigious winemaking roles in California and New Zealand, where he honed his skills under the mentorship of Zach Rasmuson. Bo's expertise, combined with Assistant Winemaker Justin Jannusch's extensive experience in Colorado winemaking, culminates in creating the 2019 Cabernet Sauvignon.
Tasting Notes: A Symphony of Aromas and Flavors
The 2019 Colterris Cabernet Sauvignon blends 97% Cabernet Sauvignon, complemented by 1.5% each of Petit Verdot and Merlot. The wine unveils a complex aromatic profile featuring dark, concentrated fruits like black currant and ripe blackberry, enhanced by cocoa, tobacco, and dried rosemary layers. On the palate, it unfolds with robust fruitfulness, velvety smooth tannins, and subtle savory notes, all harmonized by a juicy mid-palate and slight acidity. This vintage, a Double Gold Winner at SF International, embodies the unique terroir and skilled craftsmanship at Colterris.
