Xose Lois Sebio Vinos de Encostas 'O Con' Albarino, Galicia, Spain

Xosé Lois Sebio doesn’t just make wine—he crafts stories of Galicia, bottle by bottle. His ‘O Con’ Albariño is a testament to his deep connection with the land and his relentless pursuit of purity in winemaking. Sourced from 75-year-old vines in the Salnés Valley, this wine is a true expression of place, shaped by the decomposed granite and schist soils of Rías Baixas. Fermented and aged on lees in neutral barriques, it carries the essence of the Atlantic breeze, the minerality of its terroir, and the vibrant energy of Galicia’s rugged coastline.

Sensory Description:

Jessica would tell you this is Albariño at its most electric—zesty citrus, white peach, and fragrant orange blossom leap from the glass. The lees aging adds a textural depth, balancing the high-toned fruit with a round, almost saline richness. There’s a tension here, a thrilling interplay between crisp acidity and deep, stony minerality that lingers long after the last sip. It's Albariño with soul—structured, complex, and utterly captivating.

Winemaker's Background:

Xosé Lois Sebio, affectionately known as XL, has spent his career pushing boundaries. After years shaping the wines of Coto de Gomariz in Ribeiro, he took a leap, dedicating himself entirely to Viños de Encostas—a project that champions Galicia’s most expressive vineyard sites, appellation status be damned. His wines are terroir-driven, unmanipulated, and bursting with personality, each one a tribute to the rugged landscapes and old vines that inspire him.

Serving Suggestions:

Chill this to about 45-50°F and pour generously alongside fresh oysters, grilled octopus, or a crisp summer salad. It’s equally at home with a simple bowl of salty Marcona almonds or a wedge of aged Manchego. Want to see it shine? Let it open up in the glass and let the Atlantic breeze wash over you—wherever you are.
