Sensory Description:

This Champagne opens with an assertive expression of Pinot Noir, delivering structure and depth. Aromas of red orchard fruit and subtle florals are joined by chalky minerality and a delicate touch of brioche from extended lees aging. On the palate, it is lively and precise, with layers of ripe citrus, pear, and roasted hazelnut balanced by a firm backbone of acidity. The texture is both powerful and elegant, finishing with a clean, mineral-driven aftertaste that lingers gracefully.

Winemaker's Background:

Champagne Didier Herbert has been family-run since 1982, with Didier Herbert representing the third generation of growers. The estate farms land across 30 vineyard sites in five villages, including premier cru holdings in Rilly la Montagne, Ludes, and Trois Puits, as well as grand cru parcels in Mailly and Verzenay. Didier is renowned for producing eight distinctive champagnes that capture the nuances of site and grape, alongside unique creations such as barrel-aged cuvées, a 100% Meunier and 100% Pinot Noir, and limited experimental blends fermented in terracotta eggs. Beyond Champagne, the estate also produces acclaimed Ratafia de Champagne and Fine de Champagne, reflecting the family’s artisanal spirit and versatility.

Serving Suggestions:

Best served chilled at 8–10 °C, Didier Herbert Grand Cru Extra Brut pairs beautifully with white fish, shellfish, and refined seafood dishes. Its crisp minerality and lively acidity also complement roasted poultry, creamy cheeses, and elegant hors d’oeuvres.

With its deep Pinot Noir character, mineral clarity, and artisanal craftsmanship, the Didier Herbert Grand Cru Extra Brut offers a true taste of Mailly Grand Cru. Produced in extremely limited quantities, it is a Champagne of both power and finesse, ideal for those who seek purity, precision, and authenticity in every glass.
