Sensory Description:
This fino opens with a bold, nutty bouquet of cashew, walnut, and toasted pumpkin seed, interwoven with ripe apple, briny green olive, and hints of flor and light rancio. On the palate, it’s bone-dry and flor-driven, with layers of almonds, bruised apple, biscuit, and herbal notes like thyme. Low in acidity but savory and well-textured, it finishes with a medium-length, saline persistence and a creamy undertone that enhances its depth.

Winemaker's Background:
Founded in 1830, Bodegas El Maestro Sierra remains one of the most traditionally minded sherry producers in Jerez. Today, it is run by Ana Cabestrero, who has fiercely upheld the bodega’s commitment to artisanal production methods. Wines are aged in centuries-old barrels, racked by hand with natural siphoning, and bottled with minimal intervention. While some techniques stray from DO regulations, the Consejo Regulador grants them exceptions due to the singular nature and historic integrity of their wines.
Serving Suggestions:
Serve chilled at 45–50°F in a white wine or copita glass. This fino pairs beautifully with Marcona almonds, Jamón Ibérico, sushi, grilled sardines, or a classic Spanish tortilla. Its dry, umami character also complements aged cheeses and artichoke-based dishes.
