Since 2012, Patrick has farmed over ten hectares of native sugarcane and transformed it into clairin using a method steeped in heritage: cane hauled in by donkey, juice hand-poured into open fermenters, native yeast fermentation, and small-batch pot distillation. Neighboring farmers contribute to the effort by exchanging access to their cane for shared grazing land. Every bottle of Clairin Milot represents a defiant, joyous statement of cultural pride and artisanal excellence.
