Sensory Description:

This biodynamic white opens with a vibrant nose of orchard blossoms, fresh pear, and saline sea spray. The palate reveals layers of citrus zest, white peach, and subtle Mediterranean herbs, backed by a distinct minerality imparted by the red clay and sandstone soils. Its natural freshness and texture are buoyed by the proximity to the Camargue’s waterways and the cooling Mistral winds, culminating in a finish that’s both pure and persistent. Balanced and lifted, 'Le B' is as expressive as it is alive.

Winemaker's Background:

Emilie and Brice Bolognini began their journey at Mas Mellet in 2002, taking on a once-abandoned 27-hectare estate in Gallician, Gard, when they were just over 20 years old. With a deep respect for nature and terroir, they pared the vineyard down to 16 hectares and transitioned fully to biodynamic viticulture. Today, manual labor rules the vineyard, sheep graze among the vines in winter, and the wines are made with minimal intervention. Inspired by their friend and mentor Eric Pfifferling of Domaine L’Anglore, they let the terroir guide their winemaking philosophy: low sulfur, native yeasts, lunar cycles, and a deep connection to their land.

Serving Suggestions:

Serve the 2021 'Le B' lightly chilled at 50–55°F. It’s an excellent match for Provençal cuisine, grilled Mediterranean fish, herbed poultry, or creamy cheeses.
