On the palate, it is supple and focused, juicy red fruit meets soft tannins and lively acidity in a seamless balance. The texture is silky, almost velvety, leading to a refreshing, mineral-tinged finish that feels as effortless as the Atlantic breeze that shapes its vines.

At the heart of Portugal’s Bairrada region, Filipa Pato and William Wouters have redefined what authentic winemaking means. Filipa, daughter of the legendary Luis Pato and trained as a chemical engineer, brings precision and intuition to her craft, having honed her skills in Bordeaux, Mendoza, and Margaret River. William, a Belgian sommelier champion and restaurateur, complements her vision with a deep understanding of gastronomy and balance. Together, they farm their vineyards in Óis do Bairro using biodynamic principles, focusing solely on indigenous Portuguese grapes. Their goal: to create “wines without makeup”, transparent, soulful, and profoundly tied to their origins.

Serving Suggestions:

Serve at 14–16°C (57–60°F) in a large glass and aerate briefly before drinking. This fresh, medium-bodied Baga pairs beautifully with charcuterie, grilled fish, white meats, and semi-hard cheeses such as Queijo São Jorge or Mimolette.
