Sensory Description:

Pouring a deep ruby-purple in the glass, this natural Shiraz evolves with every swirl. It opens with savory notes of dried meat and earth, followed by an unfolding bouquet of blackcurrant liqueur, cassia bark, and marjoram. The medium-bodied palate is juicy and welcoming, framed by soft but structured tannins and a fine acidity that brings lift and balance. Plush, pure, and comforting, it offers an embrace of flavor that’s both grounded and bright.

Winemaker's Background:

Founded in 1979 by David Paxton, Paxton Wines has long been at the forefront of organic and biodynamic viticulture in Australia. The winery is based in McLaren Vale on the Seaview Ridge, where it cultivates 200 acres of estate-owned vineyards, including some of the region’s oldest vines. With consulting winemaker Kate Goodman and head winemaker Ashleigh Seymour, Paxton champions soil health, environmental sustainability, and minimal intervention winemaking. Their commitment to quality begins in the vineyard and is evident in every glass.
