Winemaker's Background:

Domaine Jonathan Didier Pabiot, located in Pouilly-sur-Loire, has been in the Pabiot family for six generations. Jonathan, a former motocross champion, took over in 2005 and successfully persuaded his father to transition the estate to organic farming, certified since 2006, and later to biodynamic methods in 2016. Today, the 20-hectare estate is recognized as one of only three in the appellation to follow biodynamic and natural practices. With low yields, careful vineyard stewardship, and a focus on expressing terroir, Pabiot’s wines are among the most admired in the Loire Valley.
