Lafalise Froissart’s story is deeply rooted in the history of Verzenay. The family’s journey began in the late 19th century with Charles Chauvet, who established the first vineyards. Over the decades, the estate grew despite the challenges of two world wars, with each generation adding their unique contributions to its legacy. Today, the estate spans five hectares, with Grand Cru vineyards in Verzenay and Verzy, and a small Premier Cru plot in Dizy.

Paul Froissart brings a modern perspective to winemaking, blending his family’s traditions with cutting-edge, low-intervention techniques. The estate is organic-certified and employs biodynamic farming practices to enhance the health of the vines and soils. Grassing between rows, plowing with a horse, and eliminating herbicides reflect a commitment to sustainability and respect for nature. This dedication allows each parcel to express its unique terroir, which is central to Lafalise Froissart’s philosophy.

Paul’s meticulous approach extends to the cellar, where each parcel is vinified separately and aged in barrels to capture its distinct character. The use of a perpetual reserve system, combined with extended lees aging, enhances complexity and depth in their Champagnes. The estate’s focus on terroir is highlighted through cuvées named after individual parcels, such as the 'Cuvée 276,' which represents the Les Longues Raies vineyard.
