Sensory Description

Lively and refined from the first nosing: bright florals and fresh herbs lift sweet, cooked agave with threads of citrus zest and cool minerality. The palate is supple and concentrated, layers of roasted agave, lemon–lime, white pepper, and wet stone glide on a rounded, oxygen-polished mouthfeel. Finishes exceptionally clean and long, echoing citrus oils, saline mineral tones, and a gentle herbal snap.

Volans is a family-owned project founded by Chad and Cristina Allen with Lonnie Allen, partnering with legendary master distiller Felipe Camarena at El Pandillo in Jesús María. Estate agaves, immaculate highland water sources (spring, deep well, rain), and thoughtful, low-intervention methods define the house style. Every decision, down to blending distinct blancos by water source, is aimed at transparency, purity, and an agave-first profile without additives.

Serve neat at 16–18 °C in a copita or Glencairn to showcase aromatics; a single large rock accentuates texture without muting minerality.
