Filthy began with founder Daniel Singer’s frustration that carefully prepared cocktails were routinely finished with chemically cured salad olives and overly processed cherries. Beginning in 2007, Singer and his brother Marc spent two years examining hundreds of cultivatable olive and cherry varieties in search of garnishes better suited to premium drinks. The company was then built one bar at a time, with products initially sold from car trunks and carried on subway journeys. Filthy emphasizes naturally cured olives because the process preserves their inherent nutty and savory character, reducing the need for the heavy oil and salt commonly used to restore flavor and texture to chemically treated fruit. Filthy Pickle extends that approach with a playful but functional garnish designed around both flavor and texture.
