Filthy grew from founder Daniel Singer’s frustration that thoughtfully prepared cocktails were often finished with chemically cured salad olives and conventional dessert cherries. Singer and his brother Marc spent two years exploring hundreds of cultivatable olive and cherry varieties in search of ingredients better suited to cocktails, then built the company by selling directly to bars from cars and on subway journeys. Filthy favors naturally cured olives because the slower approach preserves more of their inherent nutty character and avoids the oily surface commonly associated with heavily processed cocktail garnishes. Filthy Blue Cheese Olives extend that philosophy by pairing a substantial queen olive with a rich filling designed to complement savory drinks.
