Milieu Fermentation

Milieu Fermentation, or simply “Milieu,” meaning the social environment or vibe, is a dynamic brewery and fermentation house in Aurora, Colorado. Founded by brewing industry veterans Andrew Bergeron and Rob Bessett, the duo transformed the former Ursula Brewery space into a vibrant taproom that blends thoughtful design with adventurous fermentation.

From its opening in 2024, Milieu has emphasized both atmosphere and experimentation. Every detail of the space, from its bright-white walls to the greenery and carefully crafted fixtures, was designed by the founders and their friends in just sixteen weeks. Their vision was to create a place where everyone feels welcome, whether it’s hospital staff unwinding after a long shift, students studying, or locals gathering for a lively evening out.

True to its name, Milieu celebrates the wide world of fermentation beyond beer. While precision-brewed lagers and oak-aged ales anchor the lineup, the taproom also features hop water, hard tea, hard kombucha, and non-alcoholic options. Among the standout creations is Be Dope, a hazy IPA brewed in memory of a dear friend, with proceeds from each pour donated to rotating charitable causes. This combination of innovation and purpose has quickly earned Milieu a loyal following.

In recognition of its impact, Milieu was named “Best New Brewery” in Denver in 2025 and has already drawn acclaim at major festivals for its barrel-aged offerings. The brewery has also become a hub for community activity, hosting yoga classes, comedy nights, live music, and collaborations with other Colorado breweries.
