Winemaking Process: Pinot Blanc was harvested between October 12th and 13th, 2022. The grapes underwent whole cluster pressing and settled for two days before being racked off solids. After four months, fermentation took place in small stainless steel tanks, and the wine was bottled on April 12th, 2023. The final analysis at bottling showed a pH of 3.26, total acidity (TA) of 6.3 g/L, alcohol content at 13.5%, and residual sugar (RS) of 0.5 g/L. A total of 796 cases were produced.
