The meticulous process includes steam-roasting the halved and quartered agaves in brick kiln ovens, followed by juice extraction and double-distillation in pot stills. The final touch is a 28-day barrel conditioning in used mezcal barrels from Oaxaca, capturing the essence of early 1900s tequila preparation.
